Honey Glazed Tofu & Veggie Bowl(Single Serving)

INGREDIENTS
Tofu:
100g firm tofu (about 4-5 small slices)
1 tsp soy sauce
1/4 tsp garlic powder
1/4 tsp smoked paprika 
A pinch of chili flakes
1 tsp cornstarch 
Salt, pepper
1/2 teaspoon Airborne Manuka honey @airbornenz

Veggies:
1/2 small zucchini
1/2 cup broccoli florets
1/2 small carrot, julienned
1 teaspoon olive oil
A pinch of salt
A pinch of black pepper
A pinch of chili flakes (optional)

For the rice:
1/2 cup cooked jasmine or basmati rice
1/2 teaspoon Airborne Manuka honey (optional, for a hint of sweetness)
Fresh cilantro for garnish
Lemon wedge for serving

METHOD
To prepare the tofu, mix soy sauce, garlic powder, chili flakes, spices and honey in a small bowl. Toss the tofu slices in the mixture and let them marinate for 10 minutes. Air fry it for 10 minutes in 190 C or: Heat olive oil in a pan over medium heat and cook the tofu for 3 to 4 minutes on each side until golden and crispy. Remove and set aside.

Veggies: slice the zucchini, floret the broccoli, julienne the carrots. Heat olive oil in the same pan and cook the carrots for 2 minutes. Then, add zucchini and broccoli, seasoning with salt, pepper, and chili flakes. Sauté everything for 3 to 4 minutes until tender-crisp.

To assemble the bowl, add the cooked rice to a bowl, then top it with the crispy tofu and sautéed veggies. Drizzle a little extra Manuka honey if desired, garnish with fresh cilantro, serve with a lemon wedge and enjoy.
